Larding is a culinary technique that consists in opening holes in a piece of meat or fish and adding ingredients to provide flavor or juiciness. Larding needle or lardoir is the cooking tool to add lard/fat/vegetables/herbs/etc to a roast or fish before cooking. Today they can be found in stainless steel but I suspect they were once made in Sterling or silver plate. Does anyone have a sterling/SP example to share? I wish I had one to show, but I do not. Lard seems to be making a comeback as I saw today on a food program it being used in making biscuits. They did look good. IP: Logged |

I mentioned this at dinner. Wally mentioned that what was done before larding needles was Barding. I didn't know what Barding was.
