Scott Martin Forum Master Posts: 11520 Registered: Apr 93	posted 12-08-2017 03:15 PM Larding is a culinary technique that consists in opening holes in a piece of meat or fish and adding ingredients to provide flavor or juiciness. Larding needle or lardoir is the cooking tool to add lard/fat/vegetables/herbs/etc to a roast or fish before cooking. Today they can be found in stainless steel but I suspect they were once made in Sterling or silver plate. Does anyone have a sterling/SP example to share?
