While attending a conference in Vienna in late November, I visited the Hofburg. Among its many attractions is a new museum devoted to the Empress Elizabeth, affectionately known as Sissy. As the “Princess Diana” of her day, Sissy has become something of a cult figure, and if you visit Austria, you will find her picture (along with Mozart’s) plastered on almost everything.

Anyway, what may be of interest to the forum is a fascinating exhibit on Hapsburg silver in the Sissy Museum. Before the dissolution of the monarchy in 1918, the royal family amassed hundreds of pounds of silver and silver-plate. I found the table protocol as fascinating as the accoutrements. Social standing determined not only where you sat (and whether you actually got to eat or merely to watch others feast), but whether or not the staff set your place with silver-plate or solid silver.

The setting order differed considerably from contemporary practice here or in Europe with all tableware on the right side. The order was knife, fork, spoon, knife fork, cocktail fork, and two more spoons above the setting to the right of an array of five different glasses. I am not sure what the significance of setting etiquette is or where and when it originated, but it would be interesting to find out. I presume utensils were place in order of use from outside in, but why on only one side of the plate? Has anyone researched this subject?

Hi, Tom. Sounds like a wonderful exhibit. Alan Gruber's book called Silverware has some extraordinary illustrations of formal table settings from the 16th to 19th century and there is some discussion around the associated etiquette.
