It looks like there is a Hiram Judson and a Hiram Juston that are the same person. Hiram Judson was a watchmaker and jeweler in Syracuse in the time frame that you give for Hiram Juston. Hiram began in business between 1820 and the time of the incorporation of the Village of Syracuse (1825). In 1830 Hiram Judson was a trustee of the Syracuse Savings Bank. Hiram was a Justice of the Peace, a Ward Inspector, and in 1851 Hiram Juston was a Justice and Commissioner. Hiram Judson is also listed in the 1850 U S Federal Census for Syracuse, New York as a jeweler. There is also an X Judson under the category of watches and jewelry on Clinton Square in Syracuse listed in the 1850-51 New York State Mercantile Union Business Directory.
